Cheesy Love Letters
So, maybe you have some puff pastry kicking around. Why not make these deliciously cheesy little puff pastry parcels?
This is not exactly the traditional fruit Solothurner Liebesbrief (recipe here), but rather a cheesy variant in a similar form.
Assemble your fillings.
I chose Gruyère (it was on sale), figs (they are in season), onions, and thyme, but almost anything will do, apples, pears, all manner of cheeses and herbs. Go wild.

Preheat the oven to 200C / 400F / gas mark 6
Roll out puff pastry and cut into squares.
Fill squares with toppings, cheese first.
Fold corners into centre to close the parcel.
With trimmings, cut out hearts (or other shapes) and place over centre of parcel.
Bake for about 20 minutes, until golden.
It's easiest if you put the puff pastry squares on the baking sheet before filling and folding them, as they are harder to move once filled.
You can use small cookie cutters to make different decorative shapes. Hearts and other simple forms can be cut by hand.
If the folding is too fiddly, or if you you have extra, simply make a puff pastry pizza.
